Aunty Liz’s Famous Carrot Cake

3 eggs
1/4 cup pineapple juice
1 cup vanilla yoghurt
3/4 cup self raising flour
3/4 cup sugar
1½cups grated carrot
2/3 cup coconut
1 teaspoon bicarb soda
½ cup well drained crushed pineapple

Combine all ingredients in a bowl and mix with wooden spoon.
Bake in a moderate over for 50 minutes. Ice with cream cheese icing or icing sugar

Cream Cheese Icing:
90g cream cheese
90g butter
1 cup icing sugar

Beat butter and cream cheese, add icing sugar
