Bronte’s Mini Lamingtons

Pre bought sponge cake
ICING
3 tablespoons of boiling water
2 tablespoons of Cocoa
30 g butter
2 cup icing sugar
2 cup desiccated coconut

ICING:

Mix all ingredients together then add a dash of boiling water and mix to a runny consistency, but not too runny.
Place icing in a double boiler - over boiling water. Cut cake into 4cm squares. Then put a piece of cut sponge cake on a fork and ladle icing over the top until covered, hold it while it drips then roll in fine coconut. Dry on cake rack.
