Kelsey’s Home-cooked Muffins |

POPPY SEED ORANGE MUFFINS
1 1/3 cup flour
1/2 cup sugar
1/2 cup non-fat plain yoghurt
3 tbsp butter
2 egg whites
1 tbsp poppy seed
1/2 tsp baking soda
4 tbsp orange juice concentrate (unsweetened)
Preheat oven to 200°C. In a mixing bowl beat all ingredients at low speed until moistened (about 1 minute).
Spoon batter into greased muffin tin. Bake for 17-22 minutes or until lightly browned. Makes 12 muffins.
